HOUSTON – Ray Busch used to be a Harris County Sheriff's deputy, but now he is the pit-master at Ray's BBQ Shack.

He learned his craft from a Houston legend named River Falls. Busch owns "the shack" along with his wife Maxine and her son Herb, who used to be in the NFL.

"I played in Green Bay and my last stop was in Jacksonville, 2012," Herb Taylor said.

Now, the game is won on the grill.

"Everything, everything, everything's good," said diner Sammy Mitchell. "The sliced beef is off the chain if you want to say it like that."

Just for KHOU 11 News, Busch shared one of his barbecue secrets.

"One thing I can tell you not to do, don't drink and try to barbecue because you won't have the patience. You won't do it exactly what you need to do," he said.

People regularly come to Ray's from 50 or 60 miles away.

Ray's BBQ Shack is on O.S.T. at Calhoun, down the street from the University of Houston and Texas Southern University, so they get a lot of college students. That's good for business.

"Yeah, they eat a lot and they have a lot of little weird requests but I mean it's fun," Taylor said.

One student kept coming in asking for fries piled with chopped beef, beans, barbecue sauce and sour cream, he said. They put the dish on the menu and named it after the student whose name is Jake.

"Jake fries" are a very popular item, Taylor said.
