Need to spice up your salad routine? Try this yummy lemon tahini cucumber Greek salad! This recipe is fully raw and totally vegan. And it's packed with nutrients to help you feel your best.
Houstonian and YouTuber Kristina shares one of her favorite go-to lunch dishes:
Cucumber Noodle Greek Salad
Ingredients:
- Cucumbers or cucumber noodles
- Soaked garbanzo beans
- Red onion
- Cherry Tomatoes
- Pitted Olives
- Parsley
Instructions:
- Make your cucumber noodles. If you don't have a spiralizer, try a carrot peeler!
- Mix all ingredients together in a large bowl
- You can eat this with just a bit of balsamic, salt, and pepper. Or try the lemon tahini dressing.
Lemon Tahini Dressing
Ingredients:
- Juice from 2-3 lemons
- 2-3 Tbs. raw tahini
- Himalayan salt
- Balsamic (optional)
Instructions:
- Blend all ingredients together.
- If you want balsamic, add it at the end.
